Mochi Dough Ingredients

  • 120g Glutinous rice flour
  • 20g Cornstarch
  • 30g Sugar
  • 180g Milk
  • 20g Unsalted butter

Coconut Cream Filling Ingredients

  • 200g Whipping cream
  • 30g Sugar
  • 50g Coconut cream (santan)
  • Coconut flavouring (optional)
  • 1–2 Sunkist® Navel oranges

Mochi Dough

Directions

  1. In a microwave-safe bowl, mix glutinous rice flour, cornstarch, sugar, and milk until smooth.
  2. Sieve the mixture to remove any lumps.
  3. Cover with cling film and poke a few holes to release steam.
  4. Microwave for 3–4 minutes until fully cooked.
  5. While hot, add butter and mix until smooth.
  6. Once cool enough to handle, stretch and fold the dough for about 5 minutes until smooth and elastic.

Coconut Cream Filling

Directions

  1. Whip whipping cream and sugar until stiff peaks form.
  2. Gently fold in coconut cream and coconut flavouring, if using.
  3. Transfer to a piping bag and chill in the refrigerator.

Assembly

Directions

  1. Divide the mochi dough into 6–8 equal portions.
  2. Lightly coat each portion with cornstarch and roll into thin rounds.
  3. Pipe the coconut cream filling onto the centre and add fresh Sunkist® Navel orange pieces.
  4. Wrap, seal, and shape gently.
