Ingredients

  • 250g all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 60g granulated sugar (not too sweet; if you prefer sweeter, you can add more)
  • 100ml coconut milk
  • 160ml orange juice (about 2 Sunkist Navel oranges)
  • 30ml neutral flavoured cooking oil
  • A few drops of natural food colouring

Directions

  1. In a bowl, sift flour and baking powder. Add salt and sugar and mix thoroughly.
  2. In a measuring cup, mix orange juice, coconut milk, cooking oil & natural food colouring. Mix well.
  3. Mix both wet and dry ingredients using a whisk until batter forms. Add natural food colouring until it reaches your desired colour.
  4. Transfer batter into a measuring cup.
  5. Line aluminum cups with paper cupcake holders.
  6. Pour batter into cups, then knock the batter to release air bubbles.
  7. Steam for 20 minutes over high heat.
