Ingredients

  • 1 Sunkist®️ late-Navel orange
  • 600g/1 bunch of pucuk paku
  • White sesame seeds
  • Crushed peanuts
  • About ½ cup dried shrimps
  • Shallots

Kerabu Dressing Ingredients

  • ¼ cup Thai chilli sauce
  • Fish sauce or salt to taste
  • Sugar or plum sauce to taste (about 2 tbsp)
  • 2 tbsp vinegar
  • A dash of white pepper
  • Orange zest
  • Orange juice (optional)

Directions

  1. Zest and cut the peel of 1 Sunkist®️ late-Navel orange. Cut orange into wedges.
  2. Air fry dried shrimps at 160°, 10 minutes before deep frying to ensure crispiness.
  3. Deep fry dried shrimps until golden brown.
  4. Clean and cut pucuk paku. Blanch pucuk paku in water, salt and the oil from frying dried shrimps for 15 to 20 seconds, then drain and set aside.
  5. To make the dressing, mix chilli sauce, plum sauce, vinegar, salt, white pepper, orange zest and orange juice (optional).
  6. To serve, plate the pucuk paku, shallots, orange wedges, crushed peanuts, sesame seeds and fried dried shrimps. Drizzle with dressing and top with orange zest.
