Ingredients

  • 2 Sunkist®️ late-Navel oranges
  • 1 tbsp Halba Campur (mixed Indian spices)
  • 2 dried chillies
  • 2 bulbs shallots
  • 2 cloves garlic
  • 1 tomato
  • 1 stalk curry leaves
  • 1 tbsp crushed black pepper
  • ¼ cup chopped coriander
  • 3 tbsp Rassam powder
  • ½ cup water
  • Salt to taste
  • 1 tbsp sugar

Directions

  1. Juice 1 orange. Cut the other orange into chunks.
  2. Heat up oil in a pot and add Halba campur. Once the spices begin to sizzle, add dried chilies and shallots.
  3. Saute for 2 minutes and add garlic, chopped tomato and salt. Once the tomatoes are softened, add curry leaves, black pepper and Rassam powder. Continue sauteing briefly.
  4. Lower the heat, add water and continue sauteing the mixture for 1 minute. Add orange juice and taste for seasoning - you can add salt, sugar or coriander to your taste.
  5. Cover the mixture and let simmer for 5 minutes. Do not let it come to a boil.
  6. Turn off the heat and add orange chunks and chopped coriander.
  7. Serve with rice and papadam and enjoy!
