Directions
- Combine milk, cream, sugar, and orange zest in a pot. Gently warm the mixture over low heat, stirring continuously until sugar dissolves and the zest perfumes the milk with a subtle orange fragrance. Do not bring to a simmer or boil.
- Place egg whites in a large bowl. Add the warm milk mixture. Whisk gently until well combined.
- Strain the mixture through a fine-mesh sieve and divide into heat-safe bowls or ramekins. Remove any bubbles on the surface with the back of a spoon. Cover the bowls with aluminum foil.
- Steam on medium low heat for 10 minutes. Steaming times can vary depending on the size, thickness, and material of your steaming vessel — adjust accordingly. When done, the pudding should be soft and jiggly but set in the center. Turn off the heat and allow the puddings to rest in residual heat for an additional 5 minutes.
- To serve, top the milk puddings with a sprinkle of orange zest and a couple of orange segments. These puddings can be served warm or chilled.
