Mochi Dough
Directions
- In a microwave-safe bowl, mix glutinous rice flour, cornstarch, sugar, and milk until smooth.
- Sieve the mixture to remove any lumps.
- Cover with cling film and poke a few holes to release steam.
- Microwave for 3–4 minutes until fully cooked.
- While hot, add butter and mix until smooth.
- Once cool enough to handle, stretch and fold the dough for about 5 minutes until smooth and elastic.
Coconut Cream Filling
Directions
- Whip whipping cream and sugar until stiff peaks form.
- Gently fold in coconut cream and coconut flavouring, if using.
- Transfer to a piping bag and chill in the refrigerator.
Assembly
Directions
- Divide the mochi dough into 6–8 equal portions.
- Lightly coat each portion with cornstarch and roll into thin rounds.
- Pipe the coconut cream filling onto the centre and add fresh Sunkist® Navel orange pieces.
- Wrap, seal, and shape gently.
