Directions
- Place coconut milk in a saucepan, over low heat.
- Cook coconut milk until it reaches 75F° (coconut milk should not be boiling, just heated to warm).
- Crack the eggs into a mixing bowl. Add in the orange juice and sugar. Mix well. (Avoid whisking too hard to avoid air bubbles from forming).
- Pour coconut milk into egg mixture. Stir gently to mix.
- Standby a stock pot filled with water (up to a quarter full). Heat up until the water is boiling and then reduce to low heat.
- Place the mixing bowl on top of the stock pot (double boiler). Stir continuously with spatula until desired texture.
- Remove and let it cool.
- Store in an airtight jar.
- Serve the Citrus Kaya with cream crackers to make a complete meal for a Malaysian breakfast.
