Ingredients

  • 4 eggs
  • 1 cup caster sugar
  • 1.25 cup fresh coconut milk
  • Juice from 1 Sunkist® Navel orange
  • Zest from 2 Sunkist® Navel oranges

Directions

  1. Place coconut milk in a saucepan, over low heat.
  2. Cook coconut milk until it reaches 75F° (coconut milk should not be boiling, just heated to warm).
  3. Crack the eggs into a mixing bowl. Add in the orange juice and sugar. Mix well. (Avoid whisking too hard to avoid air bubbles from forming).
  4. Pour coconut milk into egg mixture. Stir gently to mix.
  5. Standby a stock pot filled with water (up to a quarter full). Heat up until the water is boiling and then reduce to low heat.
  6. Place the mixing bowl on top of the stock pot (double boiler). Stir continuously with spatula until desired texture.
  7. Remove and let it cool.
  8. Store in an airtight jar.
  9. Serve the Citrus Kaya with cream crackers to make a complete meal for a Malaysian breakfast.
