Vegan BBQ Chicken Pita Pizzas

Directions
- Preheat the oven to 425 degrees F.
- Add all of the ingredients for the barbecue sauce (see ingredients section) into a small pot over medium heat and bring to a boil.
- Once boiling, reduce to a simmer, whisking frequently, until a thick sauce forms, or about 15 minutes. Remove from heat and set aside.
- In a separate large pan, add the avocado oil over medium heat along with the vegan chicken. Sauté for a few minutes or until the vegan chicken is golden brown, about 4 minutes. Set aside.
- Warm each of the pita breads in the microwave for 15 seconds to soften. Line a baking sheet with parchment paper or a silicone baking mat. You can bake these in multiple batches or on multiple baking sheets if you have them.
- Place the pita bread on the baking sheet and dress them with barbecue sauce, followed by cheese, vegan chicken and red onion. Place the baking sheet into the oven and bake for 8 minutes.
- Remove and cool for a minute or two before serving. Repeat until you have cooked all of the pita pizzas.
- Garnish each pita pizza with 1 tablespoon of fresh cilantro.
