Lemon Kuih Bahulu

Slightly sweet and light with hints of lemon, this Malaysian delight was shared by Sally Camacho Mueller.

Ingredients

  • 6 whole eggs
  • 1.75 cup granulated sugar
  • 3 tbsp honey
  • 2 Sunkist® lemons (zest from)
  • 1 tsp vanilla extract
  • 1 tsp sea salt
  • 3 cups cake flour, plus 2 tbsp
  • 1 tbsp baking powder, plus 1 tsp
  • 1 tsp baking soda
  • 1 cup heavy cream
  • 1 cup Sunkist® lemon juice
  • 1 cup butter, warmed and melted

PREP TIME

Preparation: 30-40 minutes

Baking: 20-25 minutes

Directions

  1. Using an electric mixer, combine eggs, sugar, honey, zest, vanilla, and salt. Whip until light and airy.
  2. Sift cake flour, baking powder, and baking soda.
  3. In a separate bowl, combine cream and lemon juice. Alternate folding in sifted ingredients. Do this in 2 increments. Lastly, fold in the warm butter all at once. Allow mixture to sit for 2 hours before use.
  4. Prepare kuih bahulu molds by brushing them with melted butter.
  5. Pipe with a piping bag or spoon in batter into prepared molds.
  6. Bake in preheated 350°F oven for 20-25 minutes.
  7. Take out of the oven and allow it to cool slightly.
  8. Remove from mold and enjoy warm or at room temperature.

    Notes:
    • Mixture best made one day in advance of baking.
