Mandarin Orange Ramen Noodle Salad

Sweet and tangy, this Midwest inspired mandarin orange ramen noodle salad is a great side dish for potlucks or barbeques.

Ingredients

  • 4 Sunkist® mandarins
  • 1 package (14 oz) shredded coleslaw mixture with carrots (about 6 cups)
  • 1 package (3 oz) “Oriental” flavour instant ramen noodles, seasoning packet reserved
  • 2 green onions, thinly sliced
  • 0.5 cup sliced almonds, toasted
  • 2 tbsp sesame seeds, toasted
  • 0.25 cup white wine vinegar
  • 1 tbsp sesame oil
  • 3 tbsp canola oil
  • 0.25 cup sugar
  • 0.5 tsp salt

PREP TIME

Preparation: 10 minutes

MARINATING: 60 minutes

Directions

  1. Peel and segment the mandarin oranges and place in a large bowl with the slaw mix.
  2. Remove the dry ramen noodles from the package and set the seasoning packet aside.
  3. Break up the noodles and add to the slaw, along with the green onions, almonds, and sesame seeds.
  4. In a small bowl, whisk together the reserved seasoning packet, vinegar, oils, sugar, salt, and spice until sugar is dissolved.
  5. Pour dressing over the slaw mixture and toss together. Refrigerate for at least 1 hour to hydrate noodles.

    VARIATION:
    • Be sure to allow at least one hour for salad noodles to marinate in the dressing before serving.
