Radicchio, Fennel and Orange Salad Ingredients

  • 2 Sunkist® oranges, sliced into rounds
  • 1 bulb fennel, thinly sliced and fennel fronds, finely chopped
  • 1 head radicchio, roughly torn
  • 0.5 cup walnuts, toasted

Citrus Vinaigrette Ingredients

  • 0.25 cup olive oil
  • 2 tablespoons Sunkist® orange juice (Navel or Valencia), freshly squeezed
  • 2 tablespoons white wine vinegar
  • 1 pinch of salt and pepper

Preparation: 15 Minutes

cooking: 3 Minutes

Radicchio, Fennel and Orange Salad

Directions

  1. Assemble the salad by layering the radicchio, fennel and orange slices.
  2. Toast walnuts in a small frying pan 2-3 minutes on low heat.
  3. Top salad with chopped fennel fronds and toasted walnuts.
  4. Pour vinaigrette over salad. (recipe below)
