Tropical Sweet & Sour Chicken

Chicken coating
Directions
- Place the chicken in a medium bowl, season with salt and pepper.
- Mix all-purpose flour and cornstarch together.
- Sprinkle over the chicken; toss to coat thoroughly. Shake off excess flour.
- In a deep skillet, add in sufficient cooking oil for deep-frying.
- Once oil reaches 280F°, deep-fry the chicken for 6 minutes.
- Set aside; allow chicken to rest for 2 minutes.
- Let oil continue to heat until 350F°.
- Place the chicken back into the oil; deep-fry for another 2 minutes until golden brown.
- Dish out and drain on paper towels.
- Set aside.
Sweet & sour sauce
Directions
- Heat oil in frying pan over medium heat.
- Once hot, add in red onion, capsicum green, capsicum yellow and garlic.
- Stir fry until vegetables are slightly softened, about 1 minute.
- Add in ketchup, Sunkist® Navel Orange zest, Sunkist® Navel Orange juice and sugar; mix well.
- Stir continuously until sauce is reduced to desired thickness.
- Add in chicken; stir to combine.
- Place on a serving plate; sprinkle with sesame seeds.
