Chicken Marination Ingredients

  • 1 chicken chop or 250g boneless chicken thigh
  • 1 tsp oyster sauce
  • 1 tsp soy sauce
  • 0.25 tsp caster sugar
  • 0.25 tsp white pepper
  • 0.25 tsp salt
  • 0.5 Sunkist® Navel orange, juice
  • 0.5 Sunkist® Navel orange, zest

Pizza Sauce Ingredients

  • 1 can whole peeled tomatoes (400g)
  • 0.5 tsp crusted black pepper
  • 0.5 tsp salt
  • 0.5 dried oregano
  • 1 tsp sugar
  • 0.25 cup extra virgin olive oil
  • 8 pcs fresh basil leaf

Other Ingredients

  • 1 tbsp cooking oil
  • 0.5 red onion, sliced thick ring
  • 0.5 tsp fresh parsley, chopped
  • 0.66 cup shredded mozzarella cheese
  • Pre-made plain pizza base (can be purchased from grocery store)
  • 1 Sunkist® Navel orange segment, chunked

Chicken Marination

Directions

  1. Mix all ingredients together and marinade chicken overnight.

Pizza Sauce

Directions

  1. Place all ingredients into food blender.
  2. Blend until fine.


Sunshine Island Pizza

Directions

  1. Drain overnight chicken and pat dry with paper.
  2. Heat oil in frying pan over medium heat.
  3. Once hot, place chicken in and pan fry until cooked and golden brown.
  4. Remove and let it cool.
  5. Once cooled, cut chicken into chunks. Set aside.
  6. Place pizza base on a baking tray. Spread pizza sauce over the dough, leaving 1 inch of empty space at the edge of the pizza base.
  7. Cover the pizza with shredded Mozzarella cheese.
  8. Place chunked chicken over the pizza, followed by red onions.
  9. Bake at 480F° for approximately 8-10 minutes until golden brown.
  10. Remove pizza from the oven, place Sunkist® Navel orange segments on top. Sprinkle with parsley.
